La p\u00e2te repose ensuite pendant 20 minutes \u00e0 2 heures.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pendant cette p\u00e9riode de repos, les enzymes naturellement pr\u00e9sentes dans la farine commencent \u00e0 d\u00e9composer les amidons et les prot\u00e9ines.
