{"id":2763,"date":"2024-02-13T09:47:00","date_gmt":"2024-02-13T14:47:00","guid":{"rendered":"https:\/\/bakery-distribution.com\/?p=2763"},"modified":"2025-01-30T12:55:12","modified_gmt":"2025-01-30T17:55:12","slug":"brioche-de-la-saint-valentin","status":"publish","type":"post","link":"https:\/\/bakery-distribution.com\/fr\/recettes\/brioche-de-la-saint-valentin\/","title":{"rendered":"Brioche de la Saint-Valentin"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\"><strong>Par Christian Gillet<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Formateur en boulangerie-p\u00e2tisserie<\/em><br><em>Champion de France de boulangerie<\/em><br><em>BakeLabRC consulting<br><a href=\"http:\/\/Formateur en boulangerie-p\u00e2tisserie Champion de France de boulangerie BakeLabRC consulting  www.apprendreautrementlapatisserieboulangerie.com\" target=\"_blank\" rel=\"noreferrer noopener\">www.apprendreautrementlapatisserieboulangerie.com<\/a><\/em><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Information<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Cette recette est pour une garniture apr\u00e8s cuisson de la brioche.<br>Voir compl\u00e9ment scientifique par Rachel Blanchon pour une garniture avant cuisson.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Craquelin<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>100g de sucre crystal <\/li>\n\n\n\n<li>100 g de beurre <\/li>\n\n\n\n<li>100 g de Farine T55 <\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">M\u00e9langer le sucre et le beurre pommade, puis la farine.<br>Colorer \u00e0 l\u2019aide de colorant naturel.<br>Abaisser entre deux feuilles plastiques et mettre au froid.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Coulis g\u00e9lifi\u00e9<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250 g de pur\u00e9e de fruits <\/li>\n\n\n\n<li>70 g de sucre&nbsp;<\/li>\n\n\n\n<li>4 g de g\u00e9latine <\/li>\n\n\n\n<li>Zeste citron<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Donner une \u00e9bullition \u00e0 la pur\u00e9e additionn\u00e9e du sucre.<br>Puis hors de la source de chaleur ajouter la g\u00e9latine ramollie.<br>Mouler et mettre au froid.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>Compl\u00e9ment scientifique&nbsp;<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La g\u00e9latine est un g\u00e9lifiant d\u2019origine animale qui est thermor\u00e9versible. Autrement dit, apr\u00e8s g\u00e9lification, la pr\u00e9paration redevient liquide si elle est chauff\u00e9e.&nbsp;Ce g\u00e9lifiant ne permet pas de garnir une viennoiserie avant cuisson sachant qu&#8217;\u00e0 l\u2019int\u00e9rieur la viennoiserie atteindra environ 90 \u00b0C (194\u00b0 F) durant la cuisson.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si vous souhaitez garnir la viennoiserie avant la cuisson, il faut utiliser un g\u00e9lifiant thermoirr\u00e9versible qui reste stable \u00e0 hautes temp\u00e9ratures. L\u2019Agar-agar, g\u00e9lifiant d\u2019origine v\u00e9g\u00e9tal provenant d\u2019algues r\u00e9pond \u00e0 ce crit\u00e8re, mais aussi aux clients d\u00e9sireux de ne pas consommer de denr\u00e9es d\u2019origine animale. L&#8217;Agar-agar a un pouvoir g\u00e9lifiant 8 fois sup\u00e9rieur \u00e0 celui de la g\u00e9latine :&nbsp;1 g d&#8217;agar-agar = 8 g de g\u00e9latine.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Utilisation de l\u2019Agar-agar dans la recette :<\/strong> attention aux fruits acides qui r\u00e9duisent son action g\u00e9lifiante. L&#8217;agar-agar doit \u00eatre mis \u00e0 froid d\u00e8s le d\u00e9but et doit subir une \u00e9bullition.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Brioche<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 kg de farine Gruau T 55 <\/li>\n\n\n\n<li>600 g d&#8217;oeufs<\/li>\n\n\n\n<li>20 g de sel<\/li>\n\n\n\n<li>25 g levure boulang\u00e8re&nbsp;<\/li>\n\n\n\n<li>100 g de sucre&nbsp;<\/li>\n\n\n\n<li>500 g de beurre <\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Pr\u00e9paration<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Peser et pr\u00e9parer les mati\u00e8res premi\u00e8res. Pr\u00e9parer la cuve et le crochet.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">P\u00e9trissage<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Frasage\/p\u00e9trissage avec farine T55, 50% d&#8217;\u0153uf, levure, sel et sucre (robot avec crochet vitesse 1 \u2013 15 min). La consistance doit \u00eatre ferme. La p\u00e2te prend de la force. <br>Bassinage du reste des \u0153ufs. La p\u00e2te doit d\u00e9coller de la paroi de la cuve. Incorporation du beurre. La p\u00e2te doit \u00eatre lisse.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Pointage<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">De 60 \u00e0 120 min \u00e0 temp\u00e9rature ambiante. Elle doit \u00b1 doubler de volume.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Rabattre (ou rompre ou donner un tour) <\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Stockage \u00e0 +4\u00b0 C (39\u00b0 F) &nbsp;de 6 \u00e0 48 h.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Pr\u00e9paration de la brioche Saint-Valentin<\/strong><\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Abaisser le craquelin finement entre deux feuilles plastiques, et r\u00e9server au froid.<\/li>\n\n\n\n<li>D\u00e9tailler \u00e0 l\u2019aide de cercle en forme de C\u0153ur le craquelin et le laisser au fond du cercle sur une feuille sulfuris\u00e9. Le cercle est pr\u00e9alablement beurr\u00e9. Vous pouvez d\u00e9corer l&#8217;int\u00e9rieur du cercle avec des graines (pavot ou s\u00e9same).<\/li>\n\n\n\n<li>D\u00e9poser 40 g de brioche par cercle sur le craquelin et cuire pendant 1 h \u00e0 28\u00b0 C (83\u00b0 F).&nbsp;<br>Pour des g\u00e2teaux de 6 personnes, il faut 250-300 g de brioche par g\u00e2teau. Vous obtiendrez 6 \u00e0 7 g\u00e2teaux.<\/li>\n\n\n\n<li>Remettre une feuille sulfuris\u00e9e et une plaque au-dessus pour la cuisson afin d\u2019obturer les moules.<\/li>\n\n\n\n<li>Cuire 17 \u00e0 20 min \u00e0 170\u00b0C (338\u00b0F).<\/li>\n\n\n\n<li>Sortir du four, d\u00e9mouler, laisser refroidir.<\/li>\n\n\n\n<li>Garnir avec la pur\u00e9e g\u00e9lifi\u00e9e \u00e0 l\u2019aide d\u2019une poche et d\u2019une douille, puis d\u00e9corer le dessus des g\u00e2teaux.<\/li>\n<\/ol>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-1
