Ces cr\u00e9ations qui r\u00e9sultent de la fusion de deux classiques de la p\u00e2tisserie (fran\u00e7aise, am\u00e9ricaine, anglaise, italienne&#8230;) offrent une exp\u00e9rience culinaire in\u00e9dite et souvent spectaculaire. Voici une recette hybride, fusion d&#8217;une viennoiserie type &#8220;pain au chocolat&#8221; avec un brownie : le Chocolaty&#8217;Brownie.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pour r\u00e9aliser un insert brownie, <a href=\"https:\/\/bakery-distribution.com\/fr\/recettes\/brownie-facile\/\">c&#8217;est par ici<\/a><\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Pour 10 \u00e0 12 pi\u00e8ces individuelles<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500 g farine de bl\u00e9 T65 &#8220;Tradition Fran\u00e7aise&#8221;<\/li>\n\n\n\n<li>500 g de farine de Gruau T45 (ou tout autre farine de Gruau)<\/li>\n\n\n\n<li>420 g lait froid<\/li>\n\n\n\n<li>18 g sel<\/li>\n\n\n\n<li>50 g levure boulangerie<\/li>\n\n\n\n<li>20 g miel<\/li>\n\n\n\n<li>100 g sucre<\/li>\n\n\n\n<li>200 g beurre<\/li>\n\n\n\n<li>600 g beurre de &#8220;tourage&#8221;<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Pr\u00e9paration<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Mettre tous les ingr\u00e9dients dans le bol d&#8217;un robot (sauf le beurre de tourage).<br>M\u00e9langer 5 min vitesse 1, puis 15 min \u00e0 vitesse 2, jusqu\u2019\u00e0 ce que la p\u00e2te devienne lisse.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pr\u00e9lever une partie de cette p\u00e2te (environ 20%) et ajouter du cacao selon votre go\u00fbt. La quantit\u00e9 de cacao va d\u00e9pendre de la couleur souhait\u00e9e et de la &#8220;force&#8221; du cacao utilis\u00e9e. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Premi\u00e8re fermentation :<\/strong><br>Mettre la p\u00e2te au cong\u00e9lateur pendant 30 min.<br>Former la p\u00e2te en boule et la mettre au r\u00e9frig\u00e9rateur pendant une nuit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Beurrage&nbsp;:<\/strong><br>\u00c9taler la p\u00e2te (au laminoir ou au rouleau) en rectangle de 20 cm x 40 cm (pour un p\u00e2ton de 600 g de p\u00e2te).<br>D\u00e9poser au milieu le beurre de tourage (200 g) l\u00e9g\u00e8rement \u00ab&nbsp;travaill\u00e9&nbsp;\u00bb afin d\u2019\u00eatre de la m\u00eame consistance que la p\u00e2te.<br>Coup\u00e9 les c\u00f4t\u00e9s de la p\u00e2te non recouvert de beurre et replacer les sur le beurre. La longueur doit \u00eatre 3 fois plus longue que la largeur (entre 6 mm et 1 cm d&#8217;\u00e9paisseur par exemple).<br>Plier la p\u00e2te en trois en rabattant un des bouts sur le milieu de la p\u00e2te (1\/3 du rectangle), et l&#8217;autre bout par-dessus le premier. Humidifier un peu le p\u00e2ton afin d\u2019assurer un bon collage.<br>Laminer une derni\u00e8re fois la p\u00e2te bicolore obtenue.<br>D\u00e9couper la p\u00e2te selon la forme souhait\u00e9e, par exemple en bande fa\u00e7on &#8220;pain au chocolat&#8221;.<br>Placer un morceau de brownie au centre et rouler la p\u00e2te sur elle-m\u00eame. class=\"wp-block-paragraph\"><strong>Cuisson :<\/strong><br>Cuire au four pendant 18\/20min \u00e0 180\u00b0 C (356\u00b0 F)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>C<\/em>ompl\u00e9ment scientifique <\/strong><br><em><em>Par Rachel Blanchon<\/em> <\/em><br>Lors de la <strong>cuisson de la viennoiserie<\/strong>, la temp\u00e9rature au centre est de 90\u00b0C maximum. Il est donc possible de faire cuire l&#8217;insert brownie avant, car ce g\u00e2teau n&#8217;a pas besoin de seconde cuisson.<br>Pour tendre vers<strong> l&#8217;anti-gaspillage,<\/strong> il est possible et facile de faire un brownie avec des \u00ab vieux \u00bb croissants ou du pain au chocolat (de la veille).
