\u00e0 temp\u00e9rature ambiante pendant 30 min.<br>Emballer la p\u00e2te dans du film alimentaire.<br>Puis mettre la p\u00e2te au cong\u00e9lateur n\u00e9gatif (cong\u00e9lateur) pendant 30 min.<br>Sortir la p\u00e2te et redonner une forme \u00e0 la boule.<br>Mettre de nouveau la p\u00e2te dans du film alimentaire et stocker au cong\u00e9lateur positif (r\u00e9frig\u00e9rateur) pendant 1 nuit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour la p\u00e2te \u00e0 croissant rouge, diluer le colorant rouge en poudre dans un peu de lait (quantit\u00e9 selon la densit\u00e9 d\u00e9sir\u00e9e) et le m\u00e9langer \u00e0 la p\u00e2te. <br>P\u00e9trir de nouveau (vitesse 4) afin que le colorant se m\u00e9lange bien, ou utiliser un petit &#8220;robot-coupe&#8221;. M\u00e9langer jusqu&#8217;\u00e0 obtenir une couleur homog\u00e8ne.<br>R\u00e9server la p\u00e2te color\u00e9e au r\u00e9frig\u00e9rateur (emballer dans du film alimentaire).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tourage :<\/strong><br><em>Pour 600 g de p\u00e2te, utiliser 180 g de beurre.<\/em> <br>\u00c9taler et aplatir la p\u00e2te \u00e0 croissant &#8220;base&#8221; en carr\u00e9 de 20 cm x 20 cm \u00e0 l&#8217;aide d&#8217;un laminoir (ou d&#8217;un rouleau \u00e0 p\u00e2tisserie). \u00a0<br>Mettre le beurre de tourage au milieu du p\u00e2ton et recouvrir en rabattant les bords sur le beurre. Souder la jointure en pressant doucement avec un rouleau. <br>Donner 1 tour double et 1 tour simple. <br>Former un grand rectangle de 60 cm (de long) x 20 cm (de large).<br>Prendre la p\u00e2te color\u00e9e, l&#8217;aplatir aussi \u00e0 la m\u00eame dimension que la p\u00e2te croissant &#8220;base&#8221;. <br>Placer ensuite la p\u00e2te rouge sur le bloc de p\u00e2te \u00e0 croissant &#8220;base&#8221;. <br>Proc\u00e9der au laminage final (au laminoir ou au rouleau) afin d&#8217;obtenir un rectangle de 22 cm x 55 \u00e0 60 cm.<br>La p\u00e2te finale doit avoir une \u00e9paisseur de 3 ou 4 cm. <br>Couper les bords de la p\u00e2te afin qu&#8217;ils soient nets. <br>D\u00e9couper des triangles de 25 cm x 8,5 cm. \u00c9tirer l\u00e9g\u00e8rement chaque triangle \u00e0 la main dans sa longueur, et fa\u00e7onner les croissants, puis les placer sur un plateau.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-2 27\u00b0 C (80\u00b0 F).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">R\u00e9aliser un sirop avec du sucre et de l&#8217;eau en portant le m\u00e9lange \u00e0 \u00e9bullition, puis r\u00e9server.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cuisson : <\/strong><br>Cuire les croissants au four \u00e0 180\u00b0 C (356\u00b0 F) pendant 18 \u00e0 20 min.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>D\u00e9coration :<\/strong><br>A la sortie du four, laisser refroidir un peu les croissants, puis badigeonner les avec le sirop (refroidi) pour plus de
