Ingredients
- 600 g dark chocolate “couverture” at 30° C (86° F)
- 375 g softened butter
- 450 g eggs
- 360 g sugar
- 160 g T55 or T65 wheat flour
- 375 g pecans, walnuts or hazelnuts
Preparation
Melt the broken chocolate with the butter. Let cool for a few minutes.
Meanwhile, beat the eggs with the sugar until the mixture whitens.
Add the melted chocolate to the egg-sugar mixture, then pour in the flour. Mix well.
Add the coarsely chopped pecans (walnuts or hazelnuts).
Butter and flour a baking pan (preferably square) and pour in the mixture.
Bake at 180° C (356° F) for 15 min, checking regularly with a knife blade.
