On July 24 and 25, Bakery Distribution Warehouse’s Masterclass 2025 brought together more than 40 participants for two days of intensive training in baking and pastry making. Once again, under the guidance of Christian Gillet, French Baking Champion, and Rachel Ziegler Blanchon, scientist, students — both passionate amateurs and professionals — were able to follow a program adapted to their level.

This year, for the first time, the training was offered at two different levels. The “Discovery” session was aimed at enthusiastic amateurs, aspiring entrepreneurs, or beginner professionals who wanted to learn the basics, understand the unique qualities of French flours, and learn the essential techniques. The “Advanced” session was aimed at experienced bakers and pastry chefs who wanted to deepen their techniques and discover new approaches.

This two-tiered organization made it possible to adjust the content to suit the wide variety of participant profiles. Between demonstrations, practical workshops, and theoretical input, the exchanges were as rich as they were convivial, combining technical expertise with good mood. A special focus was given to comparing French and American flours, supported by practical tests. Unsurprisingly, French baguettes came out on top, winning over everyone with their airy crumb and far more enticing aroma!

Among the creations were sourdough breads, baguettes, braided brioches, pains au chocolat, croissants (including a two-tone version), savory chouquettes, and the exclusive 2025 creation: the Dubaï Danish, a flaky pastry filled with a creamy yet crunchy mix of pistachio, white chocolate, and kadaïf. At the end of each day, all creations were presented and everyone left with a sampling of their work — as well as a bag of Foricher flour. And all participants graduated!
