Flour particularly adapted to the production of yeast dough and puff pastry: fritters, brioches, tarts, pies, croissants, pains au chocolat, etc

A very fine, light flour, obtained from the heart of the wheat kernel and very low in minerals, which gives it its white color and soft texture. This T45 flour is perfect for delicate pastries, such as cakes, cookies, pastries and pastry shells. Recipe examples: babas, beignets, brioches, kouglofs, savarins, tarts, friands, galettes, mille-feuilles, palmiers, pithiviers, tarts, tourtes, croissants, pains au chocolat. Its finesse also makes it easy to incorporate ingredients and knead, so preparations are homogenous and light.
