Product Description
Small spelt flour (petit épeautre), also known as “engrain” in French, is an age-old cereal appreciated for its nutritional and gustatory qualities. This flour, from a hardy variety of wheat, is rich in protein, fiber, vitamins (particularly B and E) and minerals such as magnesium and zinc. It is also more easily digested than modern wheat, making it ideal for people with gluten sensitivity, although it does contain a small amount of gluten. Breads made with petit épeautre flour have a soft texture and a slightly sweet, nutty flavor. Thanks to the low gluten content, the breads are denser than those made with wheat, with a more compact crumb and a crisp, golden crust.
